Boiled Eggs

My favorite way to boil eggs used to be the steaming method from America's Test Kitchen.  That changed when we got an Instant Pot.  Here's how I boil eggs these days.

  1. Put the eggs on a trivet in the Instant Pot.
  2. Add 1 cup of water.
  3. Set it for 5 minutes at high pressure.
  4. Release the pressure as soon as the cooking time is done.
  5. As soon as it's safe to open the lid, remove the inner pot and fill it with cold tap water.
  6. Pour off most of the water and fill it again with cold tap water.
  7. Let the eggs sit in the water until they cool off.
The main advantage of this method is that pressure cooking them makes them a lot easier to peel.  Use the same amount of water and cooking time, regardless of the number of eggs or the size of the Instant Pot.

Interesting Observation

You could set the time for up to 7 minutes if you're going to eat the eggs right away.  I like to cook a bunch at once and put most of them in the fridge for later.  If I cook them for more than 5 minutes, then they seem dry and overdone on the second day.

  1. Not having a newfangled pot I do it the old way. There are many “:old” ways, all claiming to be easy to cook and peel the egg. Any method will work some of the time, (older eggs peel more easily than fresher eggs, for example.) but I have only found one method that works every the time.
    1. Bring the water to a rolling boil.
    2. Gently add the eggs.
    3. Boil until done (your preference)
    4. Remove from heat and cool eggs with cold running water.
    5. Peel immediately and the shell will almost fall off.
    6. Store peeled eggs in tight container and refrigerate
