Bacon - how to cook it

Bacon cooking methods to produce the best flavor   There was a blind test where the eaters of bacon were given some bacon and told to eat it. It wasn’t until the test was over that the method of cooking the bacon on each plate was revealed. The testers were told to not mark down a plate because some of it was over/under done. The cook took credit for those sorts of things. In this test the same brand of bacon was used for each cooking method. To start 6 packages of bacon were all cut in half, the pieces were separated, and all the bacon strips were placed into a large bowl. Portions of bacon were taken out to be used for each cooking method. Some of the time/temperature information was a bit sketchy. Air Fryer – tasted extra salty – Came in second place Cast Iron pan with 1/2 cube of butter – added a butter flavor Deep fried – very curly Microwave for ten minutes – flavorless/maybe the taste a little off. Crusty Eggs

This is a simple trick for making fried eggs with a little bit of crunch.  The variation in texture makes them a treat. Spray a small frying pan with oil, add a thin layer of cheese on the bottom of the pan, and set it on high heat.  As soon as the cheese starts to melt, crack a couple of eggs on top of the cheese.  Keep the heat on high until the cheese just starts to smell a bit toasted.  Then carefully turn the eggs and continue to cook until done.  Add salt and pepper, then serve. An easy trick for turning the eggs without breaking the yolks is to slide them onto a plate, invert the pan over the plate, then invert the pan and plate together.  If you use the same plate to serve the eggs, you won't have anything extra to clean. I like my eggs over easy with salsa.  

Low Fat Chocolate Cheesecake

Okay, so calling this "low fat" isn't totally accurate because there's still a fair amount of fat.  But, it's quite a bit less than the original recipe, so I'm sticking with the name.  This was originally an Instant Pot recipe.  I cut out some fat, increased the cake size, and replaced the Instant Pot with a regular oven.
