Actually Yummy Tofu

Tofu is a wonderful ingredient that's pretty simple to use, once you know what to do with it.  If you eat it plain, you'll be sorely disappointed.  There are a lot of ways to make it actually yummy, and this is just one of them. Tofu prepared this way can be eaten by itself.  It's a fun high-protein snack you can keep in the fridge.  You can also add it to curry, put it on a sandwich, or use it pretty much anywhere you might use chicken.  Does it taste like chicken?  No.  But it doesn't have to.  Both are good in their own ways. I use the firm tofu from Costco.  Even though it's called firm, it's still pretty soft as far as food goes.  I want it to have a slight chewiness.  I also don't want it to fall apart I mix it with the other ingredients in this recipe.
