Crusty Eggs

This is a simple trick for making fried eggs with a little bit of crunch.  The variation in texture makes them a treat.

Spray a small frying pan with oil, add a thin layer of cheese on the bottom of the pan, and set it on high heat.  As soon as the cheese starts to melt, crack a couple of eggs on top of the cheese.  Keep the heat on high until the cheese just starts to smell a bit toasted.  Then carefully turn the eggs and continue to cook until done.  Add salt and pepper, then serve.

An easy trick for turning the eggs without breaking the yolks is to slide them onto a plate, invert the pan over the plate, then invert the pan and plate together.  If you use the same plate to serve the eggs, you won't have anything extra to clean.

I like my eggs over easy with salsa.

  1. That is a great recipe.
    I cook eggs in a non-stick omlette pan. (About 7 - 9 inches pan) That way I can toss the egg into the air and flip it on the way down.
