Actually Yummy Tofu
Tofu is a wonderful ingredient that's pretty simple to use, once you know what to do with it. If you eat it plain, you'll be sorely disappointed. There are a lot of ways to make it actually yummy, and this is just one of them.
Tofu prepared this way can be eaten by itself. It's a fun high-protein snack you can keep in the fridge. You can also add it to curry, put it on a sandwich, or use it pretty much anywhere you might use chicken. Does it taste like chicken? No. But it doesn't have to. Both are good in their own ways.
I use the firm tofu from Costco. Even though it's called firm, it's still pretty soft as far as food goes. I want it to have a slight chewiness. I also don't want it to fall apart I mix it with the other ingredients in this recipe. The secret is to bake it twice. The first bake simply dries it out a little, so it can stand up to being mixed around a bit. The second bake dries on the coating, and gives it a wonderful texture.
Ingredients
2 pounds firm tofu2 tablespoons corn starch
2 tablespoons soy sauce
2 tablespoons oil
1/2 teaspoon salt
1/4 teaspoon sesame oil
2 teaspoons mustard
Steps
Preheat oven to 425, with convection if available.Cut tofu into 3 slabs, then cut lengthwise into thirds and the short way into fifths. Spread it onto parchment paper on a baking sheet. Bake for 20 minutes to dry it out.
Whisk remaining ingredients together, except for the cornstarch. Toss with the baked tofu in a large bowl. Add the cornstarch and toss again. Move the tofu back to the baking sheets, trying to keep any remaining liquid in the bowl. Bake for another 25 minutes.
